Golden Fruit Cake

Preparation 30MINS + 5-7 DAYS SOAKING TIME

Method

Combine fruit and 1/2 cup of brandy in a large bowl. Cover and store in a cool, dark place for 5-7 days, stirring each day.

Preheat oven to 150°C and grease a 22cm round deep cake tin. Line with three layers of brown paper, extending papers 5cm above rim

  1. Stir slivered almonds, pineapple and grated apple into fruit mixture. Set aside
  2. Beat butter, caster sugar and brown sugar together until creamy. Add eggs, one at a time, beating until combined. Add to fruit mixture and mix well.
  3. Stir sifted dry ingredients through the wet mix. Spread evenly into pan. Tap pan several times on bench to settle the mixture.
  4. Decorate with blanched almonds. Bake for 3-3 1/2 hours or until a skewer inserted in the centre of the cake comes out clean.
  5. Leave hot cake in the tin and wrap in foil, then a thick tea towel to cool overnight.

HINT: FOR AN EXTRA MOIST CAKE, PIERCE THE TOP OF THE CAKE ALL OVER WITH A FINE SKEWER AND SPOON A LITTLE EXTRA BRANDY OVER, BEFORE COOLING.

Ingredients

1kg Sunbeam Mixed Fruit

125g Sunbeam Raisins

125g Sunbeam Currants

1 cup Sunbeam Slivered Almonds

1 cup brandy

1/2 cup crushed pineapple, drained

1 small Granny Smith Apple, grated

250g butter, softened

1/2 cup caster sugar

2/3 cup firmly packed brown sugar

4 eggs

2 cups plain flour

1/2 cup self raising flour

1/2 tsp bicarbonate of soda

2 tsp mixed spice

120g Sunbeam Blanched Almonds (to decorate)

White Christmas

  1. Grease and line base and sides of a 27cm x 17cm slice pan with baking paper, extending paper over sides.

  2. Place chocolate and coconut oil in large heatproof bowl over a saucepan one-third filled with simmering water. Stir until melted and remove from heat.

  3. Add sultanas, almonds, cherries, rice cakes and coconut. Stir to combine and spread into prepared pan. Press down firmly.

  4. Set aside to cool for 1 hour or until set. Refrigerate if weather is hot. Cut into 18 pieces to serve.

Christmas Slice

Preheat oven 150°C (fan-forced).

  1. Line a loaf tin (20cm x 10cm) with baking paper.
  2. Combine all ingredients in a bowl and stir until well combined.
  3. Spoon mixture into prepared tin and bake for 40mins. Allow to cool. Dust with icing sugar and slice thinly.

Traditional Christmas Puddings

  1. Combine fruit, cranberry sauce, brandy and spices in a large bowl, cover and leave to stand overnight.
  2. Brush 10 x 1 cup pudding basins (ramekins) or one 10 cup basin, with melted butter and line the base with baking paper.
  3. Mix eggs, butter, brown sugar and flour until well combined, then stir through fruit mixture.  Spoon mixture into prepared basins
  4. Cut a large circle of foil and baking paper, and place over each pudding, foil side up. Secure tightly with kitchen string.
  5. Place puddings in a large saucepan and add enough boiling water to fill halfway up the sides.  Cover and bring to the boil, reduce the heat and cook for  1 ¼ hours for the small puddings or 5 hours for the large pudding, replenishing water when needed.
  6. Remove from water and store well wrapped until Christmas.

Lemon Friands

  1. Pre-heat oven to 180°C (160°C fan-forced). Grease with some butter and dust with additional almond meal 12 x ⅓ cup capacity friand moulds.
  2. Combine icing sugar, almond meal and flour in a large mixing bowl.
  3. In a separate bowl, whisk the egg whites until frothy. Stir in the butter and juice. Add to the icing sugar mixture and mix until well combined.
  4. Pour between prepared moulds and bake for 20 minutes. Allow to cool for 5 minutes before removing from pan and cool completely on a cooling rack. Serve dusted with additional icing sugar.

Spiced Nuts & Seeds

  1. Pre-heat oven to 170°C (150°C fan-forced). Combine nuts and seeds in a large bowl with salt and spices.
  2. Combine oil and maple syrup and tip over nut mixture. Toss well.
  3. Spread onto a lined oven tray and bake for 12 minutes, tossing occasionally until toasted. Remove from oven and allow to cool.

Sunbeam Spiced Christmas Cake

In a large bowl, combine mixed fruit, cherries, nuts, apple, golden syrup and liquor.  Mix well, cover and allow to stand overnight (or up to 24 hours for amazing flavour).

Preheat oven to 150ºC (130ºC fan forced).  Very generously grease the bundt tin, ensuring butter is in all creases. 

Add sugar and butter to the bowl of a stand mixer fitted with a beater attachment.  Beat until fluffy and pale.  With the motor running, add eggs one at a time, beating until incorporated before adding the next. 

Add flour and spices, beat on low until just combined.  Add orange zest and soaked fruit mixture and beat until just combined. 

In a small bowl mix together orange juice and bicarbonate of soda, add to the cake batter and beat until just incorporated.

Spoon batter into the prepared bundt tin, using a spatula to press mixture into any crevices and flatten the surface.

Bake for 2 ¼ to 2 ½ hours or until the cake springs back when gently pressed in the centre.  Allow cake to cool in the tin for an hour then invert onto a baking rack to remove and allow to cool completely.
