Carrot, Walnut & Raisin Cake

Method
Preheat oven to 180β.
Grate young fresh carrots to give one full cup & strain the juice from 440g can of crushed pineapple.
In a bowl mix 1 cup of plain flour, 1 tsp baking powder, 3/4 tsp bicarb soda, 1/2 tsp each of salt & cinnamon & 3/4 cup caster sugar. Add 2 eggs and 5 Tbsp oil (just under 1/3 cup).
Sir in the grated carrot, crushed pineapple & 1/4 cup Sunbeam walnuts, chopped. Bake in a moderate oven 175 oC for 40 – 45 minutes and cool before covering with topping. (Note: We slightly froze the cake to make firm to slice into layers to add frosting in between)
To make cream cheese topping, place in a bowl butter, cream cheese, vanilla, icing sugar and beat very well. If too thick add a small amount of milk to give a smooth consistency.
Ingredients
1 cup (150g) Plain flour
1 tsp Baking powder
3/4 tsp Bicarb soda

3/4 cup (170g) Caster Sugar
2 Eggs
5 tbsp (70g) Olive oil (1/3 cup)
440g tin Crushed Pineapple
1/4 cup (30g) Sunbeam Walnuts + 1/2 cup (60g) to garnish
1/4 cup (40g) Sunbeam Raisins
1 cup Grated Carrot
FROSTING
120g Butter
120g Cream Cheese
1 tsp Vanilla
250g Pure Icing Sugar

Bircher Muesli
- Combine oats, water, lemon juice and sultanas in a bowl. Cover and refrigerate overnight.
- Stir in yoghurt, apple and honey.
- Top with almonds and hazelnuts.
Chocolate Raisin Pudding
Pre-heat oven to 190Β°C (170Β°C fan-forced).
- Roughly chop raisins and place in a small saucepan with port. Bring to a boil, remove from heat and set aside to cool.
- Place chocolate and butter in a bowl over simmering water, stirring often until melted and smooth. Cool slightly.
- Beat together the eggs, yolks and sugar until pale and increased in volume. Add chocolate mixture, mixing until well combined. Fold in flour with the raisins and mix well.
- Spoon mixture between 6 x 250 ml capacity oven proof serving dishes. Place onto an oven tray and bake for 10-12 minutes until just cooked. Allow to sit for 3-4 minutes before serving with cream or ice-cream.
Hot Cross Bun Loaf
Place flour, yeast, sugar, allspice, cinnamon and salt in mixing bowl and briefly mix until combined.Β
Add in melted butter, warm milk, egg, sultanas and currants.Β
Mix with dough hook on medium speed for 5-7 minutes until a dough ball is formed and is coming away from the sides of the bowl.Β
Leave the dough covered with clingfilm in a warm place for approximately 1 hour or until doubles in size.Β
Knock the air out of the dough and then shape it into a loaf.Β
Place dough into a greased dough tin approximately 24cm x 13cm x 6.5 cm in size.Β
Cover dough with cling film again and let rise for approximately 40 minutes or until it has risen to about 70% of its original size.Β
Pre heat oven to 180 degrees.Β
Cross MethodΒ
Mix flour and water together until a thickish paste forms. Using a ziplock bag with the corner cut off or a piping bag, pipe crosses down the center of the loaf, and then across the other way three or four times.Β
Bake in the oven for 35 minutes, or until it sounds hollow when you tap it.Β
Let cool on a baking rack for 15-20 minutes.Β Β
Drizzle MethodΒ
Mix icing sugar and lemon juice together and drizzle over loaf whilst still slightly warm.Β
Mini Fruit Mince Tarts
To make the fruit mince filling, add all ingredients to a large bowl, mix well, cover and allow to soak for at least 1 hour.Β Β
To make the pastry, add the flour, ginger, cinnamon, butter and sugar into a food processor and blitz until the mixture resembles breadcrumbs. Whisk the egg and chilled water together in a small bowl, then slowly add to the food processor while itβs running until the mixture comes together into a dough. Remove from the food processor and shape into a disc. Wrap in cling wrap and place into the fridge to chill for at least 2 hours, or overnight.Β Β
Preheat oven to 160β.Β
Remove from the pastry from the fridge and roll out to a thin 0.3mm dough. Cut into 7cm circles using a cookie cutter or other round object, then place into lightly greased mini muffin tins (30ml capacity). Scoop the fruit mince between the pastry cases. Cut stars from the remaining pastry and place on top of each fruit pie. Brush with milk.Β
Place into the oven and bake for 25 minutes until golden brown. Remove and place onto wire racks to cool.Β Β
Baked Sweet Potatoes with Toasted Hazelnuts
- Pre-heat oven to 180Β°C (160Β°C fan-forced). Line an oven tray with baking paper.
- Rub sweet potatoes in half the olive oil and place onto baking tray. Roast for approx. 45 minutes or until just cooked all the way through.
- Heat remaining oil in a small fryingpan. Add hazelnuts and cook for 3-4 minutes or until golden. Add sesame seeds, cumin and thyme. Cook a further 1-2 minutes, remove from heat and stir in the lemon rind, season well.
- For serving, cut down the centre of each sweet potato and push out to make a small cavity. Top each with the hazelnut mixture, crumble over the feta and drizzle with lemon juice, additional oil and the harissa.
Banana Date Loaf
- Pre-heat oven to 180Β°C (160Β°C fan-forced). Line a 10 x 20cm loaf pan with baking paper. Place bananas and dates in a food processor and pulse until smooth. Add eggs and oil. Pulse until well combined.
- Transfer banana mixture to a mixing bowl and fold in flour, coconut, sugar, baking powder, cinnamon and cranberries. Pour into prepared loaf pan and sprinkle top with the seeds. Bake for 1 hour and 15 minutes. Allow to cool before slicing.
