Fruit & Nut Slice

Method

  1. Preheat oven 150°C (fan-forced).
  2. Line a loaf tin (20cm x 10cm) with
    baking paper.
  3. Combine all ingredients in a bowl and
    stir until well combined.
  4. Spoon mixture into prepared tin and
    bake for 40mins. Allow to cool. Dust with icing sugar and slice thinly.

Ingredients

200g SUNBEAM Walnuts

100g cup SUNBEAM Almonds

250g SUNBEAM Gourmet Selection Mixed Fruit

100g cup SUNBEAM Mixed Seeds

½ cup plain flour

¼ tsp baking powder

½ cup brown sugar

2 tsp mixed spice

2 eggs

1 tsp vanilla essence

½ cup icing sugar to decorate

Last Minute Christmas Cake

Melt butter in a large saucepan over medium heat.  Add the sugar and stir over the heat for 3-4 mins until combined.

Add dried fruit, bicarbonate of soda, rum, cognac and 125ml water and stir well to combine.  Increase heat to high and continue to stir until the sugar dissolves.  Reduce heat to medium then cook for a further 4 mins without stirring.  Remove from heat, cover and allow mixture to cool overnight.

Preheat oven to 150ºC (130ºC fan).  Grease and line a 23cm square baking tin. 

Add eggs to the cooled mixture and stir.  Add flour and spices and stir well to combine.  Allow the mixture to sit for 10 mins before spooning into the prepared tin and smoothing the surface.

Decorate the top of the cake with blanched almonds then bake for 2 to 2 ½ hours or until a skewer inserted into the centre of the cake comes out clean.  Check your cake every hour to ensure it is not browning too quickly on top.  If it is, cover with foil for the remainder of the cooking time.

Allow the cake to cool completely in the tin before inverting to remove.  To serve, brush with a little apricot jam that has been warmed in the microwave.

This cake can be stored for up to 3 months in the fridge – cover the cooled cake in 2 layers of plastic wrap and foil.

Crunchy Apple Slaw

  1. Place pinenuts and sesame seeds in a small frying pan and cook for 5 minutes until golden and toasted. Set aside.
  2. Combine the cabbage, apples, spring onions, raisins and mint in a large mixing bowl and toss well.
  3. Whisk together the oil and vinegar. Season to taste. Pour over apple mixture and toss well. Spoon onto serving platter and sprinkle with toasted seeds and nuts and some additional mint leaves.

Butter Biscuit Wreaths

  1. Preheat oven to 160°C and line with baking trays. Set aside 1/4 cup raisins for decorating. Roughly chop remaining raisins.

  2. Beat butter and sugar with electric mixer until light and creamy. Sift in flour and mixed spice and add chopped raisins. Mix until combined. Divide dough in half and form into two disks. Wrap and refrigerate 30 minutes or until firm.

  3. Roll dough between sheets of baking paper to 0.5cm thick. Cut 8cm rounds with cookie cutter. Transfer to lined baking trays and cut 3cm circles from middle of rounds to form rings. Reroll dough as necessary and refrigerate if too soft. Bake 15-20 minutes until lightly coloured. Cool on trays.

  4. To decorate, working with one biscuit at a time, drizzle white chocolate over the top and decorate with raisins, almonds and other decorations.

Sunbeam Decadent Fruit Mince

Mix all the ingredients in a large bowl till combined.

Place into sterilised jars and store in a cool dark dry place to macerate for as long as you can before using.

Christmas Bark

Line a 25cm x 35cm with baking paper. Place chocolate into a medium heat proof bowl; stir over a medium saucepan of simmering water until smooth (don’t let water touch base of bowl). Stir in puffed rice and coconut.

Working quickly, spread chocolate mixture onto tray as thinly as possible; sprinkle with dried fruits, biscuit and nuts.

Refrigerate until set. Break bark into pieces to serve.

Carrot, Walnut & Raisin Cake

Preheat oven to 180℃.

Grate young fresh carrots to give one full cup & strain the juice from 440g can of crushed pineapple.

In a bowl mix 1 cup of plain flour, 1 tsp baking powder, 3/4 tsp bicarb soda, 1/2 tsp each of salt & cinnamon & 3/4 cup caster sugar. Add 2 eggs and 5 Tbsp oil (just under 1/3 cup).

Sir in the grated carrot, crushed pineapple & 1/4 cup Sunbeam walnuts, chopped. Bake in a moderate oven 175 oC for 40 – 45 minutes and cool before covering with topping. (Note: We slightly froze the cake to make firm to slice into layers to add frosting in between)

To make cream cheese topping, place in a bowl butter, cream cheese, vanilla, icing sugar and beat very well. If too thick add a small amount of milk to give a smooth consistency.
