Chocolate Hazelnut Fudge

Method

  1. Line a 20cm x 20cm slice tin. Combine condensed milk and butter in a saucepan until heated through and butter has melted. Remove from heat and add chopped chocolate. Stirring until smooth.
  2. Add cherries to chocolate mixture and mix well. Pour into prepared pan and tap on the bench gently so the surface is smooth. Sprinkle with hazelnuts and refrigerate for 1 hour until firm.
  3. For serving, remove from pan and trim the edges. Cut into squares and package up to give as gifts.

395g can of condensed milk

120g butter, diced

400g dark cooking chocolate, chopped

50g SUNBEAM Glace Cherries, finely chopped

60g SUNBEAM Hazelnuts, toasted and roughly chopped

Hummingbird Christmas Cake

Preheat 170ΒΊC (150ΒΊC fan).Β  Grease and line 2 x 17cm round cake tins.

Combine flour, sugar, coconut, bicarbonate of soda and spices in a large bowl.Β  Make a well in the centre, add fruit and vegetables, lime zest, nuts, Angas Park Fruit Medley, oil, eggs and salt, stirring until combined.Β  Divide evenly among the two pans then bake for 35 mins.Β  Allow to cool completely in tins before turning out.

To make icing, in a stand mixer (or using a handheld mixer) beat together the cream cheese, butter, coconut essence and lime juice, then, with motor running, gradually add icing sugar 1 tbsp at a time until fully incorporated.

To assemble, spread icing onto the top of one cake, top with the second cake and spread icing on top.Β  Arrange flowers, Angas Park Fruit Salad and extra cashews on top, to decorate.

Sticky Date Christmas Pudding with Salted Caramel Sauce

TO MAKE THE PUDDING

1.Β Combine dates, mixed fruit, 280ml water, sugars, salt and butter in large saucepan.Β Bring to the boil then reduce heat and allow to simmer for 8 mins.

2.Β Add bicarbonate of soda, stir well and allow to cool completely (preferably overnight).

3.Β Once completely cool, add eggs, flours, spices and rum.Β Mix well.

4.Β Generously grease inside the pudding bowl.Β Pour the mixture into tin then cover with a layer of baking paper and a layer of foil and secure tightly with kitchen string.

5.Β Place a small cooling rack or an upturned oven-safe dish into the base of a large saucepan.Β Place pudding bowl on top so that it is not directly touching the bottom of the pan.Β Fill saucepan with boiling water to come half way up the sides of the pudding bowl. Bring water to the boil then reduce heat to low, cover and allow to simmer for 3 hours.Β  Remove pudding from water, allow to cool completely before removing pudding from tin.

TO MAKE SAUCE

1.Β Combine cream, butter and sugar in a saucepan. Stir over a low heat until all ingredients combined.
2.Β Stir in salt.

Orange & Olive Oil Almond Cakes (Gluten Free)

  1. Pre-heat oven to 180Β°C (160Β°C fan-forced). Line 12 x β…“ cup capacity muffin moulds with paper cases.
  2. Combine flour, almond meal, sugar and baking powder in a large mixing bowl.
  3. In a separate bowl, whisk together the oil, milk, eggs and orange rind until well combined. Add to flour mixture and mix until smooth. Pour between paper cases and sprinkle with flaked almonds. Bake for 20 minutes.Tip:
    For those avoiding dairy, simply substitute the cows milk with your milk of choice.

Decadent Fruit Mince

Mix all the ingredients in a large bowl till combined.

Place into sterilised jars and store in a cool dark dry place to macerate for as long as you can before using.

Crunchy Apple Slaw

  1. Place pine nuts and sesame seeds in a small frying pan and cook for 5 minutes until golden and toasted. Set aside.
  2. Combine the cabbage, apples, spring onions, raisins and mint in a large mixing bowl and toss well.
  3. Whisk together the oil and vinegar. Season to taste. Pour over apple mixture and toss well. Spoon onto serving platter and sprinkle with toasted seeds and nuts and some additional mint leaves.

Moroccan Chicken with Raisins, Almonds and Honey

Pat chicken dry with paper towel, and sprinkle both sides of meat with salt and pepper. Drizzle the olive oil into a large heavy-based pot over medium-high heat.

When oil is shimmering, add half the chicken pieces and cook 5 – 7 mins per side, until golden brown. Transfer to a plate and repeat with remaining chicken pieces.

Reduce heat to medium, and add onion, garlic, ras el hanout, cinnamon stick, and ginger to the hot oil. Stir well, then cook for 5 mins, until onions have started to soften.

Return chicken and any resting juices to the pot. Add stock, bring to a boil, then cover and reduce heat to low. Simmer for 1.5 hrs, until the chicken is tender.

Remove cinnamon stick and add raisins and honey to the pot. Gently stir to combine and increase heat to medium. Simmer uncovered, for a further 30 – 45 min, until the sauce has reduced and the raisins are plump. Stir through lemon juice.

Garnish with almonds and parsley. Serve with crusty bread, rice, or couscous.
