Christmas Cheesecake

Method
Preaheat oven 160 degrees (140 degrees fan).
- Brush base and sides of 25cm springform pan with butter.
- Process biscuits, extra melted butter and almond meal in a food processor until fine crumb. Press into base and sides of pan.
- Combine ricotta, cream cheese, sugar, cornflour, butter, eggs and vanilla bean paste in food processor. Blend for 2 mins then fold through sour cream and fruit.
- Pour filling over base, cover with foil and bake for 1.5 hours. Remove cake from oven, allow to come to room temperature before refrigerating overnight.
To make Toffee
- Line a baking tray with baking paper. Spread nuts evenly over tray.
- Add sugar to a medium, heavy-based saucepan over medium heat. Stir constantly until sugar completely dissolves then remove from heat immediately and pour over nuts.
- Sprinkle with sea salt flakes then allow to set. Serve cheesecake topped with shards of broken nut toffee.

1 packet Malt oβ Milk biscuits
250g unsalted butter, melted
250g Sunbeam Almond Meal
Filling
300g ricotta
300g cream cheese
1 1/2 cup caster sugar
1/2 cup cornflour
85g unsalted butter, melted, plus extra to grease tin
3 eggs
1 tsp vanilla bean paste
400mL sour cream
300g Sunbeam Mixed Fruit
Nut Toffee
40g Sunbeam Natural Almonds
40g Skinless Hazelnuts, roughly chopped
1 1/2 cup caster sugar
1/2 tsp sea salt flakes

Gingerbread Almond Wreath

Pre-heat oven to 170Β°C (150Β°C fan-forced). Lightly grease and line a 22cm ring tin.

Beat the butter and sugar until pale and creamy. Add eggs one at a time, beating well between each addition.

Stir in the almond meal, coconut, bi-carb and spices. Mix well, then stir in the currants and sultanas. Pour into prepared pan and scatter the top with flaked almonds. Bake for 55-60 minutes until an inserted skewer comes out clean. Allow to cool in the pan for 10 minutes before removing to a cooling rack to cool completely.

Serve on a platter surrounded by fresh rosemary sprigs and fill the cavity with raspberries.
Asparagus Pastries
Preheat oven to 180Β°C.
- Cut each pastry sheets into 4 squares. Mark 1cm in from the edge of pastry to resemble a photo frame. Place on paper lined baking trays.
- Panfry onions in oil for 5 minutes stirring occasionally. Pour in wine and brown sugar and cook for a further 5 minutes stirring continuously. Stir in pine nuts and cool.
- Place heaped spoonfuls of onion mixture into the centre of each pastry square. Arrange mushrooms and asparagus on top. Sprinkle with feta and brush edges with egg. Bake for 15 β 20 minutes. Serve.
Spiced Lamb in Lettuce Cups
- Heat oil in a large frying pan. Add onion and garlic, cooking for several minutes until tender. Add spices, cooking a further minute. Increase heat and add lamb mince, cooking until well browned.
- Add dates, pomegranate molasses, herbs and pinenuts. Mix well and season to taste.
- Spoon mixture between prepared lettuce cups. Drizzle with yoghurt and lemon juice, finishing with additional mint leaves.
Peanut Butter Bites
- Combine currants, sultanas, oats, peanut butter and vanilla essence in a food processor.Β Blend until a smooth, thick paste is formed.
- Divide and roll into 25 balls and place on top of skewer.
- Dip balls in melted chocolate. Before chocolate is set place two half marshmallows for ears, one pink candy for a nose and Sunbeam currants for eyes.
Mini Bombe Alaskas
Line 6 x 180ml dariole moulds (or 6 x 180ml capacity small dishes) with plastic wrap.*
Place icecream into a large bowl and allow to stand at room temperature for 10 mins, or until soft (do not allow to completely melt).Β Β Add fruit, nuts and sherry and use a spatula to mix well.
Spoon the mixture evenly between the prepared moulds and freeze overnight or until firm.
Slice the madeira cake horizontally into three big slices, about 2cm thick.Β Β Use a cookie cutter (just bigger than the bases of the icecream moulds) to cut 6 rounds from the cake slices.Β
To make the meringue, combine egg whites and sugar in the bowl of a stand mixer fitted with a whisk attachment.Β Β Whisk until stiff peaks form.
One at a time, carefully remove an icecream from the mould and place on top of a cake round.Β Β Working quickly, smooth meringue around the cake and icecream to completely cover then blowtorch until golden.Β Β Serve and repeat with remaining prepared icecreams.
Christmas Fruit Cake
Pre-heat oven to 150Β°C (130Β°C fan-forced). Use an oil spray to grease a deep bunting cake tin.Β
Combine mixed fruit, raisins, dates and currants in a large saucepan. Add water and port, mix through.
Place over a low heat for 5 minutes until liquid is absorbed and fruit softened.
Set aside to cool.
Using electric mixer, beat the butter and sugar together until creamy. Add eggs one at a time until all incorporated.Β
Fold in flours and spices. Remove from mixing stand and fold in the fruit mixture with a large spoon.
Mixing until well combined. Spoon batter into prepared bunting cake tin and tap on counter to remove air bubbles and ensure bater has filled the tin evenly.Β
Bake for 2 hours or until an inserted skewer comes out clean.Β
Allow to cool in the cake tin placed on wet tea towel before removing to a cooling rack to cool completely.Β
**To serve drizzle with your favourite glaze by mixing 1 cup of icing sugar & 2 tbsp lemon juice
