Method

Preheat the oven to 170Β°C. Line a large baking tray with baking paper.

  1. Combine oats, sugar, coconut, cinnamon, almonds, walnuts, oil and honey in a bowl. Mix with hands compacting together. Bake in the oven for 5 minutes and then stir and return for another 5 minutes.
  2. Stir in currants and sultanas and bake for a further 5-8 minutes to ensure the granola is evenly golden brown.
  3. Allow to cool completely before serving with milk or a good dollop of yoghurt.

Ingredients

2 cups rolled oats

2 tbsp brown sugar

2 tbsp desiccated coconut

1/2 tsp cinnamon

1/2 cup Sunbeam Flaked Almonds

1/4 cup Sunbeam Walnuts

3 tbsp sunflower oil

3 tbsp honey

1/2 cup Sunbeam Currants

1/2 cup Sunbeam Sultanas

Ricotta & Walnut Tagliatelle

  1. Place pasta into a large saucepan of boiling water and cook to pack directions, or until al dente. Drain.

  2. Meanwhile, heat oil in a large frying pan. Add walnuts and sunflower seeds, tossing regularly until toasted. Add garlic, chilli and lemon rind cooking a further minute.

  3. Add cooked drained pasta to the fryingpan with the ricotta, rocket, vinegar, lemon juice and some additional oil. Season and toss well.

Chocolate Ripple Christmas Wreath

You will need to begin this recipe the night before

Whip the cream to soft peaks.Β 

Spread a few tablespoons of whipped cream onto the base of a 26-28cm round serving plate.Β Β This will stop your wreath from sliding around.

Dollop 1 flat tbsp of whipped cream onto a biscuit and top with another biscuit.Β Β Repeat until you have a stack of 5 biscuits, the top biscuit should not have any cream on top.

Repeat to make 8 stacks of biscuits.

On the prepared serving plate, arrange the biscuit stacks into a wreath shape.Β Β Spread the entire biscuit wreath with just enough whipped cream to ensure the biscuits are covered on top and around the sides.Β Β Refrigerate overnight, reserving remaining whipped cream.

When ready to serve, spread remaining whipped cream around the wreath.Β Β Decorate with dried fruit and nuts.

Christmas Casata

Soften 2 litres vanilla ice creamΒ by leaving out of the freezer for 15 minutes while you chop, glacΓ© cherries & Allens Raspberries.

Toast the slithered almonds in a dry pan till slightly brown, set aside to cool.

In a large mixing bowl add softened ice cream, start by stirring in the frozen raspberries to give ice cream raspberry ripples and colour. Then add all the remaining ingredients and stir till combined.

Choose a mould or tin to set the ice cream in and freeze for a minimum 4 hours to set.

Serve frozen.

Macadamia Choc Chip Cookies

Preheat the oven to 180Β°C. Line cookie trays with baking paper.

Beat butter, extract, sugars and egg in a small bowl with an electric mixer until light and fluffy. Transfer mixture to a large bowl; stir in sifted flour and soda, in two batches. Stir in Sunbeam macadamias & chocolate chips.

Roll tablespoons of mixture into balls; place 5cm apart on trays.

Bake cookies 15 minutes or until golden; cool on trays.

Gluten Free Cake

Preheat oven to 160Β°C

  1. Grease and line a deep 23cm round cake tin with two layers of greased baking paper extending paper 5cm above rim
  2. Place the mixed fruit, butter, whisky and sugar in a large saucepan and bring to the boil. Reduce heat to low and simmer for 5 minutes, stirring constantly. Remove from heat and cool until lukewarm. Add the eggs one at a time, beating well between each addition. Sift flour with the baking powder, spice and soda and stir into mixture with Sunbeam Almond Meal and stir until thoroughly combined.
  3. Spoon into the prepared tin and bake at 160Β°C for 1 Β½ – 2 hours or until a skewer inserted in the centre of the cake comes out clean. Cool cake in tin for 30 minutes before transferring to a wire rack and cool before removing paper.

Spiced Oat Slice

  1. Pre-heat oven to 180Β°C (160Β°C fan-forced). Line an 18 x 28cm slice tray. Place honey and butter in a small saucepan and heat gently until butter is melted.
  2. Place oats, dates, sultanas, apricots, seeds and cinnamon in a mixing bowl. Pour in the melted honey mixture and mix well. Press into prepared tray and bake for 20 minutes. Allow to cool. Cut into bars.

Notes:
Lightly wipe your knife blade with a little oil when cutting dates. It will ensure the dates don’t stick to the knife and making cutting easier.
