Rocky Road Christmas Pudding

What you’ll need…

1/2 cup SUNBEAM Sultanas

1/2 cup SUNBEAM Walnuts

1 cup SUNBEAM Almonds

1 cup SUNBEAM Macadamias

1 cup ANGAS PARK Dried Figs

1/2 cup ANGAS PARK Dried Blueberries

375g Block of Dark chocolate

250ml Thickened Cream

100g White Chocolate

Icing Sugar to Dust

Holly to Decorate

Method

  1. Melt dark chocolate block and cream in saucepan over low heat and stir until combined & smooth. Take off heat.
  2. Roughly chop Sunbeam nuts, dried fruit and mix in large bowl.
  3. Add chocolate mix and combine all ingredients.
  4. Pour into baking paper lined dolly varden tin, to form pudding base. Refrigerate to set.
  5. Once set remove from tin & discard paper. Melt white chocolate, when runny pour over set pudding to form custard pour.
  6. Return to fridge to set.
  7. Serve with holly topper or decorate to taste!
