Sultana Fairy Cupcakes

What You’ll Need

2/3 cup Sunbeam Sultanas
80g butter or margarine
2/3 cup caster sugar
1 teaspoon vanilla essence
2 eggs, beaten
2 cups self raising flour
¾ cup milk
2 cups icing sugar, sifted
2 tablespoons boiling water
2 teaspoons butter, melted
food colouring


  1. Cream butter or margarine and sugar until light and fluffy. Add vanilla essence and eggs, one at a time, beating well after each addition.
  2. Fold in flour, sultanas and milk to make a smooth batter. Spoon into patty pans lined with paper cases and bake for 20-25 minutes to 180°C.
  3. To make icing mix all ingredients until smooth. Ice cakes when cold. Decorate with coloured sprinkles.
