Macadamia Christmas Cake

Makes: 12 slices



What You’ll Need

375g Sunbeam Sultanas
375g Sunbeam Mixed Fruit
½ cup rum
250g butter
1 cup firmly packed brown sugar
4 eggs
100g dark chocolate, melted
1 cup plain flour
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1 cup Sunbeam Macadamia Meal
1 cup Sunbeam Macadamia Halves


  1. Combine sultanas, mixed fruit and rum in a large bowl. Cover and allow to stand overnight.
  2. Preheat oven to 140⁰C. Line the base and sides of a 20cm deep square cake tin with a double layer of baking paper.
  3. Beat butter and brown sugar until light and creamy. Add eggs, one at a time, beating well after each addition. Add melted chocolate and beat until combined. Stir butter mixture into soaked fruit.
  4. Sift plain flour, ginger and cinnamon onto fruit mixture, add macadamia meal and nuts and stir until combined.
  5. Pour into tin and level the top. Bake for 1½ - 1 3/4 hours or until a skewer inserted in the centre of cake comes out clean. 


Decorate with melted chocolate and macadamia halves.
