| 1. | Beat cream cheese and castor sugar for 2 – 3 minutes. Reduce speed to low and gradually beat in melted chocolate. Stir in hazelnuts, marshmallows and cherries. |
| 2. | Combine crushed biscuits and butter. Press into a greased and paper lined 7 x 20cm loaf tin. Spoon rocky road into tin and smooth top. Cover with plastic wrap and leave in a refrigerator for minimum of 2 hours to set. |
| 3. | Serve cut into 1cm thick slices. Delicious served with coffee. |
