Fruit & Nut Fudge Cookies

Ingredients

  • ½ cup Sunbeam Sultanas
  • 125g plain dark chocolate, chopped
  • 2 tablespoons margarine
  • ½ cup caster sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • ¼ cup crushed nuts
  • 1 cup plain flour
  • 2 teaspoons baking powder
  • extra caster sugar

Method

1.Melt chocolate, margarine and sugar in a saucepan. Stir in the eggs and vanilla essence.
2.Add the sultanas, nuts, flour and baking powder and mix well. Refrigerate for 1 hour.
3.Form fudge into balls and place on lined baking tray with room to spread. Sprinkle with extra sugar and bake for 8-10 minutes at 200 °C.
