Fruit & Nut Butterscotch Slice

Fruit & Nut Butterscotch Slice

Ingredients

  • Base:
  • 125g plain sweet biscuits
  • 60g butter, melted
  • 1 x egg
  • Topping:
  • ½ cup Sunbeam Sultanas
  • ¾ cup dark brown sugar
  • 125g butter, cubed
  • 2 tablespoons plain flour
  • 2 tablespoons thickened cream
  • 75g pecans, roughly chopped
  • 75g Sunbeam Californian Walnuts, roughly chopped

Method

1.Place the biscuits in a food processor and process until the biscuits resemble fine crumbs. Add butter and egg and process until mixture forms a ball. Press into a lined lamington tin and refrigerate.
2.Place sugar and butter in a saucepan and bring to the boil. Remove from the heat and add the flour and cream.
3.Add nuts and sultanas and return to heat until mixture comes to the boil. Place mixture over base and refrigerate until set.
