| 1. | Place apricots in a bowl and pour over the orange juice. Set aside. |
| 2. | Cream the margarine, sugar and vanilla essence together. Add the egg white and beat well. Fold in the flour, baking powder and apricots with the orange juice and mix well to combine. |
| 3. | Roll tablespoons of the biscuit mixture into balls using wet hands. Place on a greased and lined baking tray and press with a fork. |
| 4. | Bake for 25 minutes at 160°C. |
