| 1. | Place the flour and sugar into a mixing bowl and make a well in the centre. Add the egg and milk and beat until smooth. Stir in the apricots and the lemon rind. |
| 2. | Heat a frying pan and lightly grease it with butter. Pour 2 tablespoons of batter into pan and rotate the pan to spread the batter. |
| 3. | Cook over medium heat until bubbles start to form then flip and cook on the other side. Serve with a squeeze of lemon juice and a sprinkling of sugar. |
