Apricot Pikelets

Great Kids Baking Recipe

Ingredients

  • 1 cup Sunbeam Dried Apricots, finely chopped
  • 1 ½ cups self raising flour
  • ¼ cup caster sugar
  • 1 x egg, lightly beaten
  • 1 cup milk
  • 1 teaspoon grated lemon rind

Method

1.Place the flour and sugar into a mixing bowl and make a well in the centre. Add the egg and milk and beat until smooth. Stir in the apricots and the lemon rind.
2.Heat a frying pan and lightly grease it with butter. Pour 2 tablespoons of batter into pan and rotate the pan to spread the batter.
3.Cook over medium heat until bubbles start to form then flip and cook on the other side. Serve with a squeeze of lemon juice and a sprinkling of sugar.
