Green Beans with Pine Nut Gremolata

Green Beans with Pine Nut Gremolata

  • Preparation time: 10 minutes
  • Cooking time: 5 minutes
  • Makes: 6 serves
  • Tip: Gremolata can be made several hours in advance.

Ingredients

  • 600g green beans, trimmed
  • 2 Tbs olive oil
  • Gremolata:
  • ¼ cup (35g) Sunbeam Pinenuts, toasted and coarsely chopped
  • 2 Tsp chopped parsley
  • 3 tsp finely grated lemon rind
  • 1 clove garlic, crushed
  • ground black pepper
  • sea salt flakes

Method

1.Combine all gremolata ingredients in a small bowl. Set aside.
2.Boil beans until tender. Drain and place in a serving dish and drizzle with olive oil. Sprinkle with gremolata and serve immediately.
