Rare Beef & Peanut Salad

Rare Beef & Peanut Salad

  • Makes: 4 serves

Ingredients

  • 300g butternut pumpkin, cut into 1cm thin slices
  • oil spray
  • 2 x 150g beef sirloin steaks
  • 1 continental cucumber, sliced
  • ½ cup semi sundried tomatoes
  • 1 red onion, sliced
  • 1 x 180g packet Sunbeam Dry Roasted Peanuts, reserve 1/3 cup for dressing
  • Dressing:
  • 3 tablespoons peanut oil
  • 2 teaspoons sesame oil
  • 2 tablespoons kepjap manis
  • 1/3 cup Sunbeam Dry Roasted Peanuts, finely chopped

Method

1.Arrange sliced pumpkin on a paper lined baking tray, spray with oil and cook in a preheated oven at 180°C for 15 minutes.
2.Spray steaks with oil and grill or barbecue for 3-4 minutes on either side or until cooked to medium. Stand for 5 minutes before slicing into thin strips.
3.On serving plates layer pumpkin, cucumber, steak, onion and sundried tomatoes. Sprinkle over peanuts and serve with a drizzle of dressing.
4.To make dressing, place all ingredients in a medium jug and beat to combine.
