| 1. | Arrange sliced pumpkin on a paper lined baking tray, spray with oil and cook in a preheated oven at 180°C for 15 minutes. |
| 2. | Spray steaks with oil and grill or barbecue for 3-4 minutes on either side or until cooked to medium. Stand for 5 minutes before slicing into thin strips. |
| 3. | On serving plates layer pumpkin, cucumber, steak, onion and sundried tomatoes. Sprinkle over peanuts and serve with a drizzle of dressing. |
| 4. | To make dressing, place all ingredients in a medium jug and beat to combine. |
