Walnut & Apricot Muffins

Ingredients
375g packet Sunbeam Dried Apricots, chopped
¼ cup vegetable oil
¾ cup caster sugar
1 x egg, lightly beaten
2 cups self raising flour
½ cup Sunbeam Californian Walnuts, roughly chopped
2/3 cup milk
Method
1.
Cream oil and sugar until smooth. Add egg and beat well.
2.
Fold in flour, apricots, walnuts and milk until just combined.
3.
Spoon into a greased muffin tray and bake for 15-20 minutes at 200°C.
