Pear Cupcakes

Pear Cupcakes

Ingredients

  • 200g dried pears, diced
  • 60g butter, softened
  • ½ cup caster sugar
  • 1 x egg, lightly beaten
  • 2 cups self raising flour
  • 1 teaspoon cinnamon
  • ¾ cup milk
  • extra sugar and cinnamon

Method

1.Cream butter and sugar until light and fluffy, add egg and beat well
2.Fold in sifted dry ingredients alternately with the pears and sufficient milk to make a dropping consistency.
3.Spoon mixture into deep patty pans lined with paper cases. Sprinkle each with a little extra sugar and cinnamon.
4.Bake for 15-20 minutes at 200°C.
