Fruit & Nut Muffins

Fruit & Nut Muffins

  • Makes: approximately 24

Ingredients

  • 1 cup Sunbeam Dried Apricots, diced
  • 50g Sunbeam Natural Almonds, roughly chopped
  • 50g Sunbeam Californian Walnuts, roughly chopped
  • 1 tablespoon plain flour
  • ½ teaspoon cinnamon
  • ¼ cup caster sugar
  • 2 tablespoons honey
  • 100g dark cooking chocolate

Method

1.Mix together almonds, walnuts, apricots, flour and cinnamon
2.Melt sugar, honey and chocolate over medium heat until sugar dissolves. Stir into apricot mixture
3.Roll spoonfuls into balls and place on a lined tray. Refrigerate. Serve at room temperature.
