Chocolate Fruit & Nut Muffins

Chocolate Fruit & Nut Muffins

  • Makes: 12

Ingredients

  • 1 cup Sunbeam Sultanas
  • 100g butter or margarine
  • 100g dark cooking chocolate
  • ½ cup caster sugar
  • ½ cup milk
  • 1 ¼ cups self raising flour
  • 2 tablespoons cocoa
  • 2 x eggs, lightly beaten
  • ½ cup pecan nuts, roughly chopped

Method

1.Place butter, chocolate and sugar in a saucepan and melt over low heat.
2.Remove from stove and stir in milk, flour, cocoa, eggs, sultanas and nuts and mix until just combined.
3.Spoon into a greased muffin pan and bake for 25 minutes at 160°C.
