Banana Muffins

Banana Muffins

Ingredients

  • ½ cup Sunbeam Currants
  • 1 cup bran cereal
  • 1/3 cup caster sugar
  • ¼ cup vegetable oil
  • 1 x egg
  • ¼ cup milk
  • 2 large very ripe bananas, mashed
  • 1 ½ cups self raising flour
  • pecans to decorate

Method

1.Combine bran, sugar, oil, egg and milk in a bowl. Stand for 5 minutes to soften.
2.Fold in bananas, flour and currants until just combined. Spoon mixture into a well greased muffin pan.
3.Decorate each muffin with pecans and bake for 25-30 minutes at 180°C.
