Sticky Prune & Banana Pudding

Sticky Prune & Banana Pudding

Ingredients

  • 1 x 250g packet Sunbeam Pitted Prunes, chopped
  • ¼ cup red wine
  • ¾ cup water
  • 1 teaspoon bicarbonate of soda
  • 60g butter, softened
  • ½ cup brown sugar
  • 2 x eggs
  • 1 ½ cups self raising flour
  • 1 very ripe banana, mashed
  • Butterscotch Sauce:
  • ¼ cup red wine
  • ¾ cup dark brown sugar
  • ¾ cup cream
  • 100g butter

Method

1.Combine prunes, wine and water in a pan and bring to the boil. Remove from heat and add soda. Process mixture until smooth.
2.Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Fold in flour, prune mixture and banana.
3.Pour into a greased and lined 20cm round tin and bake for 45 minutes at 180°C.
4.To make sauce combine all ingredients in a saucepan and stir over medium heat until sugar is dissolved. Pour ¼ cup of sauce over pudding and return to the oven for a further 5 minutes. Cool for 10 minutes before turning out. Serve with remaining sauce and ice cream.
