Pear Upside Down Cake

Ingredients

  • Base:
  • 200g dried pears
  • ¼ cup white wine
  • 30g butter, softened
  • 1/3 cup dark brown sugar
  • Cake:
  • 60g butter, softened
  • 2/3 cup dark brown sugar
  • 1 x egg
  • 1 ½ cup self raising flour
  • ½ cup milk

Method

1.Place pears in a bowl and pour over wine. Microwave for 2 minutes on high and then leave to soak.
2.Grease and line a 20cm round cake tin. Cream butter and sugar of base and spread on the bottom of the tin. Place pears on top of the mixture to make a pattern.
3.To make cake cream butter and sugar then beat in the egg. Carefully mix in the flour and milk alternately. Spread over the base and bake for 45-50 minutes at 180°C.
4.Leave cake to cool in tin, then invert onto a plate.
