Orange & Raisin Cake

Orange & Raisin Cake

Ingredients

  • 1 cup Sunbeam Raisins
  • 60g margarine
  • ¾ cup caster sugar
  • 1 teaspoon vanilla essence
  • 4 egg whites
  • 1 ½ cups self raising flour
  • Grated rind and juice of 2 oranges

Method

1.Cream the margarine, sugar and vanilla essence together until light and fluffy. Add the egg whites one at a time and beat well after each addition.
2.Add the flour, orange rind and juice and raisins and stir well. Pour the mixture into a greased and lined 20cm round tin and bake for 1 hour at 180°C.
3.Decorate cake with chopped lemon and orange rind, or ice as desired.
