| 1. | Cream the margarine, sugar and vanilla essence together until light and fluffy. Add the egg whites one at a time and beat well after each addition. |
| 2. | Add the flour, orange rind and juice and raisins and stir well. Pour the mixture into a greased and lined 20cm round tin and bake for 1 hour at 180°C. |
| 3. | Decorate cake with chopped lemon and orange rind, or ice as desired. |
