Golden Syrup Apricot Pudding

Ingredients

  • 1 cup Sunbeam Dried Apricots, quartered
  • 100g butter, softened
  • ½ cup brown sugar
  • 2 x eggs, lightly beaten
  • ½ teaspoon vanilla essence
  • 2 tablespoons golden syrup
  • 1 ½ cups self raising flour
  • 4 tablespoons milk
  • Sauce:
  • 2/3 cup brown sugar
  • 2 tablespoons golden syrup
  • ½ cup boiling water

Method

1.Cream butter and sugar until light and fluffy. Beat in eggs, vanilla and golden syrup.
2.Fold in flour, apricots and milk. Place in a greased 4 cup pudding dish or 8 x ½ cup dishes
3.To make sauce mix all ingredients until sugar is dissolved. Pour gently over pudding.
4.Bake for 45-50 minutes at 160°C for large pudding or 20-30 minutes for smaller pudding. Serve warm
