Fruit Choc Mini Puds

Fruit Choc Mini Puds

  • Tip: These puddings freeze well. Wrap individually in plastic wrap before freezing. Reheat in microwave.

Ingredients

  • 1 cup Sunbeam Raisins
  • ½ cup Sunbeam Pitted Dates, chopped
  • ½ cup Sunbeam Glace Cherries, chopped
  • 1 cup plain flour
  • 1 ¼ cups self raising flour
  • 125g butter
  • 200g dark cooking chocolate
  • ½ cup castor sugar
  • 4 x eggs
  • 1 cup milk

Method

1.In a bowl, combine raisins, dates and cherries and stir in flour.
2.In a small saucepan, melt butter, chocolate and sugar on medium-low heat (or microwave for 21/2-3 minutes, stirring several times) then remove from heat and beat in eggs one at a time.
3.Pour into the dried ingredients, and add the milk. Mix thoroughly.
4.Grease muffin tins and coat lightly with fine dry breadcrumbs or sugar, or grease small microwave dishes.
5.Spoon in the mixture and bake at 180°C for about 25 minutes.
6.Turn out. Decorate with extra cherries and dust with icing sugar. Serve with chocolate sauce, cream or custard.
