Chocolate Wine Fruit Cake

Ingredients

  • 1 cup Sunbeam Sultanas
  • 1 cup Sunbeam Dried Apricots, diced
  • 125g butter
  • 200g dark cooking chocolate
  • ½ cup caster sugar
  • 3 x eggs
  • 1 ¾ cups plain flour
  • ¼ cup self raising flour
  • 1 cup milk
  • 2 tablespoons red wine

Method

1.Melt butter, chocolate and sugar in a saucepan over medium heat. Remove from heat and stir in eggs one at a time.
2.Add flours, milk, wine, sultanas and apricots and mix well.
3.Pour into a greased and lined 20cm square cake tin and bake for 55-60 minutes at 180°C.
