Chocolate Self-Saucing Pudding

Chocolate Self-Saucing Pudding

Ingredients

  • ¾ cup Sunbeam Dried Apricots, quartered
  • 65g butter, softened
  • ½ cup caster sugar
  • 2 x eggs, beaten
  • 1 teaspoon vanilla essence
  • ¾ cup self raising flour
  • 2 tablespoons cocoa
  • 2 tablespoons milk
  • Sauce
  • ½ cup brown sugar
  • 1 tablespoon cocoa
  • 1 cup boiling water

Method

1.Cream butter and sugar until light and fluffy. Gradually beat in eggs and vanilla. Fold in flour, sifted cocoa and milk, then fold in apricots. Spoon into an ovenproof dish.
2.Mix all sauce ingredients together until sugar is dissolved and pour carefully over pudding mixture.
3.Bake in oven for 45-50 minutes at 180°C.
4.Serve warm with cream or ice cream.
